feat(sbom): update evidence confidence labels

Summary

• replace evidence_confidence mocked/live labels with release-facing recorded labels
• map PyPI provenance paths to provenance_recorded and Scorecard enrichment paths to enrichment_recorded
• update schema docs, CI cookbook, golden examples, and tests for the five supported labels
